Cabbage Salad

Looking for a light salad that goes with an Asian-themed dinner? This cabbage salad can be put together in five minutes. Or add some grilled shrimp for a quick-to-prepare lunch.

Ingredients:

  • ½½ small head of red cabbage, shredded
  • 1 cup240ml shredded carrots
  • ½½ English cucumber, halved vertically and sliced thinly into half-moons
  • ½ cup120ml craisins (dried cranberries)
  • ¼ cup60ml fresh mint leaves, torn into small pieces
  • ¼ cup60ml fresh cilantro leaves, left whole
  • A few Thai basil leaves, torn into piecesA few Thai basil leaves, torn into pieces

Dressing

  • 2 Tbsp25g sugar
  • 1 Tsp6g salt
  • 2 Tbsp30ml coconut milk
  • 2 Tbsp30ml white vinegar

Preparation

  1. In a small bowl, whisk together the sugar, salt, coconut milk, and vinegar until the sugar dissolves.

  2. Combine the shredded cabbage, carrots, craisins, and cucumber in a bowl and toss. Just before serving, add the herbs and dressing, then toss together.

  3. You can always add some grilled or wok-fried shrimp - or chicken - for a stand-alone light lunch.
